Capsicums contain a high level of vitamins C and vitamins A (antioxidants), numerous carotenoids and are low in fat and calories. Add the iron of the meat stuff... and you have a quick & easy dish to boost your metabolism!
- 4 medium size capsicums (reds are the sweetest)
- 400g Beef and Pork minced
- 1 onion
- 2 eggs
- 50g cooked rice
- salt, pepper and herbs
- 1 large can of tomato diced
1- Rince capsicums. Open using the V knife inside the CASA Peeler for a beautiful presentation and empty capsicum removing all seeds.
2- In a bowl, mix your minced meat, cooked rice and 2 eggs. Add salt and pepper.
3- Stuff the capsicums with your mixture.
4- Simply add the can of diced tomatoes and slowly cook for 30 min in your pot.
